Thus, this test will not work on fortified rice using fortified kernels that do not contain iron. This is a qualitative test only (i.e. detects if iron is present\/not present); quantitative details, including iron level and mixture homogeneity are beyond the scope of this procedure.<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-3554656b03dcf21358d3f70a0aec736c\">Time required:<\/h4>\n\n\n\n<p>Less than five minutes<\/p>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-cb19ac5a3d98319efced1c6fd31cecdc\">Equipment:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Scale to weigh the KSCN reagent<\/li>\n\n\n\n<li>Non\u2010metal container to hold fortified rice sample (for example, plastic cup or tray)<\/li>\n\n\n\n<li>HCl, 2N Solution1, in a non\u2010metal, labeled bottle<\/li>\n\n\n\n<li>KSCN, 10% Solution, in a non\u2010metal, labeled bottle\n<ul class=\"wp-block-list\">\n<li>To create solution, mix 10 grams of KSCN2 with 100 mL of water (distilled or bottled)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n\n\n\n<p>Reagents will last for approximately 1 month. Store bottles in a cool and dark room (air conditioned, preferably).<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-2e78083870e61b9ccca6b466ffa72795\">Step 1: Procedure for testing fortified rice for the presence of iron:<\/h3>\n\n\n\n<p>Conduct the test in a well\u2010ventilated area. Wearing goggles and disposable gloves is recommended.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Place at least 50 grams of fortified rice in a plastic cup, tray, or similar container. <\/li>\n\n\n\n<li>Pour the 2N HCL solution on the rice sample until all of the rice is wet. <\/li>\n\n\n\n<li>Pour a similar amount of the 10% KSCN solution onto the rice sample. <\/li>\n\n\n\n<li>Immediately, fortified kernels will turn red to dark red (black upon drying) indicating the presence of iron fortification (Figure 1). <\/li>\n\n\n\n<li>Repeat the test with the remaining samples.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"618\" height=\"158\" src=\"https:\/\/www.kfindonesia.org\/wp-content\/uploads\/2024\/01\/Standard-Operating-Procedure-Qualitative-Spot-Test-for-Iron-in-Fortified-Rice-.jpg\" alt=\"\" class=\"wp-image-26447\" srcset=\"https:\/\/www.kfindonesia.org\/wp-content\/uploads\/2024\/01\/Standard-Operating-Procedure-Qualitative-Spot-Test-for-Iron-in-Fortified-Rice-.jpg 618w, https:\/\/www.kfindonesia.org\/wp-content\/uploads\/2024\/01\/Standard-Operating-Procedure-Qualitative-Spot-Test-for-Iron-in-Fortified-Rice--300x77.jpg 300w, https:\/\/www.kfindonesia.org\/wp-content\/uploads\/2024\/01\/Standard-Operating-Procedure-Qualitative-Spot-Test-for-Iron-in-Fortified-Rice--18x5.jpg 18w\" sizes=\"(max-width: 618px) 100vw, 618px\" \/><\/figure>\n\n\n\n<p class=\"has-text-align-center\"><code><em>Figure 1: Fortified kernels in fortified rice will turn dark red\/black, indicating the presence of iron.<\/em><\/code><\/p>\n\n\n\n<h3 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-b6da390b8584d406564772caeaad17db\">Step 4: Log the results and dispose of sample<\/h3>\n\n\n\n<h4 class=\"wp-block-heading has-ast-global-color-0-color has-text-color has-link-color wp-elements-44a0b126609924fe2528ae263fafb922\">Notes:<\/h4>\n\n\n\n<p>Although the reagents are in diluted form, if any of the reagents come in contact with skin, wash immediately.<br><br>Fortified rice using coated or extruded technology is usually fortified in a 0.5%\u20102% blending ratio, which will result in a discrete, iron\u2010fortified kernel result as shown above. However, in the United States, dusting is the most commonly used fortification technology, and this is applied to all of the rice. However, dusting technology is not suitable for populations where the cooking practices include rinsing of the rice prior to cooking.
